Really, the answer is -- just write it the new way you want it to be -- that's all there is to changing it.
You should also notify some places that you are changing it -- anywhere that relies on your signature on a regular basis -- such as your bank, or your employer, or your school, or whatever. If you regularly sign checks for rent or mortgage or utilities, then notify them as well.
But the notice is just a courtesy to avoid confusion -- you can change your legal signature just by using a different one.
